25 ml Rhubarb Liqueur
50 ml Rhubarb Puree (Shop bought or freshly made)
Champagne or Prosecco to finish
A few drops of Vanilla essence to taste
1. Soften one chopped stick of rhubarb in a small amount of water
2. Add one tablespoon of sugar and simmer until Rhubarb softens
3. Blend into a puree with a hand blender.
4. Add Rhubarb and Vanilla Liqueur
5. Top with Champagne or Prosecco to finish
6. All that's left to do now is enjoy it!
