Raspberry Bellini

A long sharp drink for prosecco lovers! A delicious way to enjoy raspberry in the summer.

Preparation time — 15 minutes

INGREDIENTS NEEDED

25 ml Raspberry Gin Liqueur

50 ml Raspberry Puree (Shop bought or freshly made)

Champagne or Prosecco to finish

A few drops of Vanilla essence to taste

INSTRUCTIONS

1. Soften raspberries in a small amount of water

2. Add one tablespoon of sugar and simmer until raspberries soften

3. Blend into a puree with a hand blender.

4. Add Raspberry Gin Liqueur

5. Top with Champagne or Prosecco to finish

6. All that's left to do now is enjoy it!
